As you found out, you do need to flatten the friselle before you bake them and make a larger opening before you place them down in the baking dish otherwise they rise too high like regular bread. I use it to make sure my family get a bit more fibre in their diet, but have actually found that it keeps bread dough lovely and moist with a little bit of a nutty taste.
